Knife Skills/Introduction to the Kitchen $80 Per Person Sat, 3/17/07 2:00pm-5:00pm OR Sat, 5/12/07 2:00pm-5:00pm Want to learn how professionals Chop, Slice, Julienne and Dice things quickly and efficiently? Then this class is for you! CHEF ERIC will show you the all-important knife holding grips, as well as how to care for your knives. We also learn to cut items with ease advancing to the more complicated and decorative Brunoise, Paysanne, Batonnet and Tourne Cuts. You’ll be surprised how much better everything looks and tastes when the ingredients are cut correctly, cook evenly and are presented beautifully. In addition to working with vegetables, students will be learning to cut Chicken Breasts off the bone and getting a demonstration of De-boning Whole Chickens – some hardy individuals will want to attempt this in class, too. You help make a meal of delicious Roasted Chicken Caesar Salad and Vegetables.
